Banana Bread

I love this bread! My mom would make little muffins out of it and I would eat about 7 in one sitting especially if they were hot of of the oven! The bread is also really good with walnuts, or if you love chocolate and are allergic to nuts like my sister Meri, chocolate chips.



INGREDIENTS

2/3 c milk
4 tsp lemon juice
2 1/4 c flour
1 1/4 tsp soda
1 1/4 tsp baking powder
1 tsp salt
1 2/3 c sugar
2/3 c oil
3 eggs
1 tsp vanilla
1 1/4 c. mashed bananas (3 bananas)


DIRECTIONS

Mix the milk and lemon juice and let it stand. Mix all the dry ingredients and make a well. Add all oil, eggs, vanilla, and mashed bananas. Mix together, pour equally into 2 loaf pans, and bake at 350 for 50-60 minutes.

*To make low fat substitute half of the oil for 1/3 cup plain yogurt or apple sauce.
