Pumpkin Zucchini Bread


I love pumpkin anything! And turns out, I'm really liking zucchini too, so this combo intrigued me! I'm embracing fall cooking, despite the fact that its been in the upper 90's the past two weeks and there is no such thing as changing leaves down here. I got the recipe from the Six Sister's Stuff blog but made it with half whole wheat flour and applesauce in the place of oil, trying to make it a bit healthier :) It turned out really moist and tasty!

Ingredients
3 eggs
1 cup sugar
1 cup brown sugar
1 cup pumpkin
1/3 cup oil
2/3 cup applesauce
1 tbsp vanilla
1 1/2 cups whole wheat flour
1 1/2 cups white flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground cloves
1/2 tsp pumpkin pie seasoning
2 cups shredded zucchini
1 cup chopped walnuts (optional, but I used them)

Directions
Preheat oven to 350 degrees. Combine eggs and sugars. Add pumpkin, oil, and applesauce and vanilla. Combine all dry ingredients together. Add the dried mixture 1/2 cup at a time to the pumpkin mix. Add the zucchini and walnuts. Pour the bread dough into two greased and floured 9.25 x 5.25 pans.  Bake for 40 minutes. Leave loaves in pans for 10 minutes then dry on a wire cooling rack.
