Christmas Treats

To me Christmas smells like caramels. Every year starting at the beginning of December my mom started to make batches of caramels. She would give them to friends at church, our neighbors, and let us kids take them to our friends at school. These are to die for melt in your mouth caramels. Here is the amazing recipe:

CARAMELS
3/4 c. dark Karo syrup
3/4 c. butter
2 c. sugar
2c. cream
1 tsp vanilla

Grease a 9x13 pan (or size smaller) with butter. Melt butter, syrup, sugar, and 1 cup cream in 4 qt sauce pan. Bring to a boil. Microwave remaining cream for 1 minute. Add cream slowly to pan so it does not stop boiling. Place a spoonful of caramel into ice cold water. Work it with your hands. Caramel is done if it can form a soft ball in the cold water. Pour caramel into pan and let it cool completely. When cool cut caramel into bite size pieces and wrap in wax paper.

You can also take the caramels and make turtles! Just get some pecans and chocolate chips. After cutting the caramels push a pecan or two into the caramel and place on wax paper with the pecan on bottom. Melt the chocolate chips and pour over the caramels. Let dry and enjoy!
