Pita Bread

I love chicken salad and I like to eat it in pita bread but I haven't been able to find good pita bread at the store so I decided to make my own.


INGREDIENTS

1 c warm water
1 Tbsp oil
1 tsp salt
2 tsp sugar
3 c flour (1 c wheat, 2 c all-purpose)
1 1/2 tsp dry yeast

DIRECTIONS

Combine first 4 ingredients. Add 1 cup of flour with yeast and mix. Add remaining flour and knead to make a soft dough.

Put dough into a lightly oiled bowl and cover. Set in a warm place to rise until almost double (about an hour).

punch dough down and turn onto a lightly floured surface. Using a knife, cut dough into 8 equal pieces. Form each piece into a ball. Roll each ball into a 6-7 inch circle.

Set rolled rounds on a lightly floured counter or pan and cover loosely with a towel. Let rise for 25-35 minutes until sightly puffy. (they will still be thin)

Place pizza stone in oven and preheat to 500. Place 3 rounds on stone and bake for 2minutes. Flip round and cook for 2 minutes until puffy and just slightly browned.

After removing from the oven immediately wrap pita breads in a damp towel to soften. Continue baking the remaining bread and layering them between the damp towels.
