Homemade Peanut Butter Bars

These taste even better than Reese's!



Ingredients:

3/4 c. crushed graham cracker crumbs
1/4 c. butter (melted)
1/2 c. peanut butter
3/4 c. powdered sugar
1 c. milk chocolate chips

Directions
Mix first four ingredients together. Place wax paper on a pan and spread the mixture onto the wax paper to about 1 cm thick. Melt chocolate in microwave and then pour and spread over mixture. Refrigerate until firm.

Fudge Chewies

These bar cookies are so good! I just made them the other day and took them to work and everyone loved them. If you don't have a lot of time, bar cookies are great to make!

INGREDIENTS
1 cup butter
2 cups light brown sugar
3 eggs
2 cups flour
2 ½ quick oats
1 tsp soda
1 tsp salt
1 tsp vanilla

Filling:
12 oz. chocolate chips
1 can sweet and condensed milk
2 tsp vanilla
¼ tsp salt

DIRECTIONS
Cream sugar, eggs, and butter. Add flour, oats, soda, vanilla and salt. Spread in pan (9 x 13) leaving 2/3 cup of cookie mixture for top.

Make filling by melting chocolate chips in double boiler or microwave adding other ingredients. When creaming pour over mixture in sheet: With remaining cookie mixture dot on top of chocolate.

Bake at 350 for 30-40 minutes. Cool and cut into squares.

Bake at 300 convection 35 minutes for dark surface pan.

* You can all bake on a cookie sheet but for 20-30 minutes.

Special K Bars

I was first introduced to these delicious treats by my sister Rebecca when she brought home the recipe from college. I don't think I have found a person who doesn't like them... well those who are allergic to peanuts won't. I used to make these and take them to girls camp every year. They are so good we would even eat them if they fell on the floor! I make them so much I have the recipe memorized!


INGREDIENTS

6 1/2 c. Special K cereal
1 c. sugar
1 c. Karo syrup
1 1/3 c. peanut butter
1 c. butterscotch chips
1/2 c. chocolate chips




DIRECTIONS

Melt the sugar and Karo syrup in a large pot on the stove until the sugar is dissolved. Remove from heat and mix in the peanut butter. Spread into a 9x13 greased pan. Melt the chocolate chips and butterscotch chips in the microwave stirring every 20 seconds until melted. Pour the chocolate mixture on top and let cool. Cut and enjoy!
